Amylases are starch hydrolyzing enzymes which are classified as exo-amylase and endo-amylase that act on α-1,4- and α-1,6-glucosidic bonds of starch and glycogen. Currently, amylase is widely applicated in the food, detergent, paper, pharmaceutical, and textile industries. However, the development of conventional amylase production faces many challenges, among which the functional specificity and stability of the enzyme are the main issues in the commercialization process. In addition, the efficiency, cost-effectiveness and environmental friendliness of amylase production are also of major concern. With the development of synthetic biology techniques, the production of microbial amylases has successfully replaced the production of chemical processes. Recent advances in synthetic biology have led to breakthroughs in the development of high-quality amylase-producing microorganisms through genetic and metabolic engineering strategies. Synthetic biology provides new ways to significantly improve the functional specificity and enzyme stability of amylases, thus helping to achieve large-scale, efficient, and ultra-environmentally friendly industrial production of amylases.
